I was in the shower thinking about how I could make my scratch cakes lighter. My kids love the lightness of box cake mixes, but I just like to make things from scratch. Then it occured to me that I always add water to box recipes, but never to scratch recipes. So i am wondering if I added water to my scratch recipes if I would get that lighter texture my kids love? If water is not the answer, let me know what is Thanks!

if you’re using about 1 cup of butter then how much jello pudding or applesauce should to the mixture

I substitute applesauce for the shortening/oil. it always comes out soft and doesn’t taste different. plus it’s lower in fat.

we don’t have any mixers, we sold them when we moved. I have only my hands and utencils

Copied and pasted from an answer I gave last month for old-fashioned boiled icing, lol. :D

Boiled Icing (a very good recipe — it will stay soft for several days)

Put 2 c. sugar (white or brown) in a pot and add 1 c. water. Meanwhile, beat 2 egg whites ’til stiff and set aside. Bring the sugar mixture to a boil, then simmer over a medium heat; cook until it reaches the soft ball stage (when you put a drop of the syrup in a cup of cold water it forms a ball, but it collapses if you try to pick it up). Remove from heat. *Slowly* add the hot syrup to the egg whites, beating with an electric mixer or whisk as you do so. Beat until fluffy. Add vanilla (not absolutely essential if you don’t have any on hand).

Boiled icing made with brown sugar is my favourite topping for a chocolate cake. :)

Edit: Oops! Just noticed the part about not having a mixer. Honestly, though, it’s been years since I’ve owned a set of electric beaters. I use a hand whisk for egg whites all the time.

2nd edit: okay… Well then, let’s narrow this down. What kind of cake is it (flavour, layer vs. tube pan)? Knowing this would make it easier to suggest alternative toppings.
Since I’m off to bed, I throw out these possibilities:
-use whipped cream instead (don’t need a mixer — put it in a chilled glass jar and shake vigourously)
-place layers together using jam (any flavour works well with a white cake, while apricot or cherry jam goes well with chocolate). You can also use lemon curd or lemon pie filling.
-make a butterscotch sauce from brown sugar, butter and cream/milk (recipes abound on line) and drizzle over the top of the cake
-a citrus glaze can be made by heating orange juice and adding sugar then brushing on top of cake
-dark chocolate and cream — equal portions cooked gently together in a double boiler, then poured over the cake.

find a big bowl and put the cake in it. then put a wet paper towel over the bowl and put it inthe microwave.

that works for me.

also to keep it moist, put sarran wrap over it and leave it on the counter. XD

Goodness, yes! Remember to use the centre rack in the oven and try to divide batter betwixt two pans evenly. Any of these may also be baked in a 13″x9″x2″ pan.

Chocolate Cake
Preheat your oven to 350F. Butter and lightly flour two 8″ round cake pans.

Melt:
2 ounces unsweetened chocolate
in a bowl or pan over simmering water. Set aside to cool.
Cream:
1/4 lb. (1 stick) butter
Beat in:
1 1/2C. white sugar, adding slowly. Beat until light.
Add:
2 eggs
2 tsps. vanilla. Mix well.
Add:
The melted chocolate and combine thoroughly.
In a separate bowl, mix together:
2 C. cake flour OR 2 C. minus 2Tblsps. all purpose white flour
1 1/2 tsps. baking soda
1/2 tsp. salt
Add the dry ingredients to the first mixture and blend well.
Add:
1 C. ice water and beat until smooth.
Pour into the prepared pans and bake for 25-30 minutes, checking for doneness with a toothpick. Insert near the centre and pull out; if it’s clean, the cake is done. Cool in pans for 5 minutes and turn out on racks to cool completely.

White Cake
Preheat oven to 350F. Grease and flour two round 8″ cake pans.

Sift together onto a piece of waxed paper:
1 3/4C. cake flour
2 tsps. baking powder
1/4 tsp. salt
Set aside.
In a mixing bowl, beat together:
1/4 lb. butter, softened and 1 1/4C. sugar, beating until smooth and well blended.
Stir together in a small bowl or mixing cup:
3/4 C. milk and 1 tsp. vanilla
Add about half of the liquid to the butter/sugar mixture and beat. Then add the dry ingredients, beating again. Add remaining milk/vanilla mixture and beat until smooth.
In a separate bowl, beat:
3 egg whites OR 1/2 C. egg white substitute until stiff, but still moist. Drop about 1/3 of the egg whites into the batter and gently stir. Fold in remaining egg whites.
Divide the batter betwixt the pans. Bake for 20-25 minutes, testing for doneness with a pick. Remove from oven, let cool 5 minutes in pans and turn out on racks to cool completely.

Yellow Cake

Preheat oven to 350 F. Grease and flour two round 9″ cake pans.
Mix together:
2 C. cake flour
2 tsps. baking powder
1/2 tsp. salt
Set aside.
In mixing bowl, cream:
1/4 lb. butter, softened and 1C. white sugar.
Add:
3 eggs, one at a time and beat well after each addition.
Beat in:
2 tsps. vanilla
Add:
Flour mixture and 3/4 C. milk. Beat until smooth. Divide betwixt pans and bake 20-25 minutes, until done. Cool in pans 5 minutes and turn out onto racks to cool completely.

I purchased 2 small bundt cake pans and realized after I purchased them that it said for microwave cake mix only. My recipe from scratch would use both bundt pans.
I need to know the cooking time. In the oven it takes 1 hr 5 minutes but I don’t know how to figure how long in the microwave and what power.

1 cup chopped pecans
3/4 cup white sugar
2 tablespoons ground cinnamon
1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package instant pistachio pudding mix
4 eggs
1 cup sour cream
3/4 cup vegetable oil
1 teaspoon vanilla extract

Grease bundt cake pan. Mix together chopped pecans, 3/4 cup sugar and ground cinnamon. Cover bottom and sides of the bunt pan with 1/4 of the above mixture.
Blend together in a large mixing bowl: cake mix, pudding mix, 4 eggs, sour cream, vegetable oil and vanilla. Alternate layers of batter and crumb mixture in the greased pan.
Bake in microwave oven 5 minutes on low. Turn pan around if not on turn table. Bake 12 minutes on high, turning pan 1/4 turn every 4 minutes. Cool 18 minutes before turning out onto a cake dish. Baking time may vary depending on the wattage of the oven. To test for doneness, press lightly on top of cake and if it springs back it is done. Sometimes the very top of the cake will remain moist, don’t keep baking it until it is dry because the cake will be too done. Enjoy!
