I’m talking death by insane amounts of chocolate cake. Do you have a recipe you like. I’m sure I’ll get people who just copy one from the net, but I’d prefer if its one you’ve tried and love!

This is fast, easy, moist and very TASTY!
YUM!

CHOCOLATE CAKE
1 ½ cup flour
3 tbsp cocoa
1 tsp soda
1 cup sugar
½ tsp salt
1/3 cup oil (I prefer canola.)
1 tsp vanilla
1 tbsp vinegar
1 cup cold water
Put dry ingredients in a bowl. Make a well in the center.
Put the oil, vanilla and vinegar in the center.
Pour the cold water over and stir to mix.
Pour batter into 8×8 pan.
Bake ½ hour @ 350F.

I like topping it with whipped cream, and raspberries (and if I am feeling really decadent chocolate sauce with Kaluha in it). :)

In order to make a true white cake, you are still going to have some left over egg yolks. If you add the yolks in this recipe, you will end up with a yellow cake.

Classic White Cake
* 12 tablespoons (1 1/2 sticks) unsalted butter, softened
* 1 1/2 cups sugar
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 6 large egg whites (3/4 cup)
* 3/4 cup milk
* 2 teaspoons vanilla extract
* 2 (9-inch) diameter by 1 1/2-inch deep layer pans or 1 (13 by 9 by 2-inch) pan, buttered and bottoms lined with parchment or waxed paper

Directions

The fine moist crumb of this cake complements any type of filling and frosting — the perfect celebratory cake.

Set a rack at the middle level of the oven and preheat to 350 degrees. In a large mixing bowl, beat butter and sugar for about 5 minutes, until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine egg whites, milk and vanilla extract. Add 1/3 of the flour mixture to butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape bowl and beater often. Pour batter into prepared pan(s) and smooth top with a metal spatula. Bake cake(s) about 25 to 30 minutes, or until a toothpick inserted in the center emerges clean. Cool in pan on a rack for 5 minutes, then turn out onto a rack, remove paper and let cool completely.

Variation:

CLASSIC YELLOW CAKE Substitute 3 large eggs and 1 egg yolk for all of the egg whites above.

This is a recipe my grandpa always used to make it for me:

Easy Carrot Cake

1 cup granulated sugar
1 cup vegetable oil
3 eggs
1/2 tsp. vanilla
1 1/3 cups all-purpose flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
2 cups grated carrots

Directions:

Combine sugar and vegetable oil in a mixing bowl, and beat in eggs, one at a time. Add vanilla. In another bowl, combine next 5 dry ingredients and mix. Add to wet ingredients and mix together. Stir in grated carrot. Pour into a greased 9″ X 13″ pan. Bake at 350°F for approximately 35 minutes or until inserted toothpick comes out clean. Cool and ice cake.

Cream Cheese Frosting

INGREDIENTS
4 oz. cream cheese
1/4 cup butter
1 tsp. vanilla
2 cups icing sugar

Beat cream cheese, butter and vanilla together. Add sugar gradually, and beat until fluffy. Spread onto cake.

I’m looking for a recipe for a white cake that’s moist. The white cake recipe i’ve used in the past seems to turn out sort of dry no matter what I try. I don’t want to use a cake mix…I prefer to make my own. Anyone have any recipes or know anything I can try to make it more moist?

White Cake

Ingredients

1 cup flour
2/3 cup sugar
1/3 cup cornstarch
2 tsp baking powder
1/2 tsp salt (optional)
2 egg whites
2/3 cup skim milk
1/3 cup Karo light corn syrup
1 tsp vanilla

Instructions

Spray 9 inch square baking pan with cooking spray. In large bowl combine flour, sugar, cornstarch, baking powder and salt. In medium bowl, using fork or wire whisk, mix egg whites, milk, corn syrup and vanilla. Add to flour mixture, stir until smooth, but as little as possible. Pour into prepared pan. Bake in 350 F oven 20-25 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Makes 16 servings: 0 g fat, 0 mg cholesterol,100 calories, 2 g protein, 22 g carbohydrate, 125 mg sodium
Note:
This is pretty good, but can get rubbery textured if beaten too much during mixing.

Banana Nut Cake With Cream Cheese Frosting Recipe

Cake:
Butter, for greasing pans
3 cups all-purpose flour, plus more for pans
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 eggs, beaten
3/4 cup vegetable oil
4 large ripe bananas, mashed
1 cup chopped pecans
1 1/2 teaspoons vanilla extract
Frosting:
1 (8-ounce) package cream cheese, at room temperature
1/2 cup butter (1 stick), at room temperature
1 pound confectioners’ sugar, sifted
1 teaspoon vanilla extract
1/2 cup chopped pecans

Butter and flour 3 (9-inch) round cake pans; set aside. Preheat oven to 350 degrees F.
Cake:
In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon, and salt. Add the eggs and oil and stir just until the dry ingredients are moistened; do not beat. Stir in the banana, pecans, and vanilla. Divide the batter among the prepared pans and bake for 23 to 28 minutes, or until a wooden pick inserted in the center comes out clean. Cool the cake layers in the pans for 10 minutes, and then turn them out onto a rack to cool completely. While the cake cools, make the frosting.

Frosting:
In a bowl, blend together the cream cheese and butter. Gradually add the confectioners’ sugar and beat until light and fluffy. Beat in the vanilla. Stir in the pecans, or reserve them to sprinkle over the frosted cake. Fill and frost the cake when it is completely cool

Recipes Using Cake Mixes #14: Easy Fresh Peach Cobbler

You can use peach pie filling for this, but using fresh peaches makes it soooo good! seven small to medium ripe peaches, peeled, pitted and diced (I’m thinking that 8-10 would have been even better) 1/2 cup sugar 1 teaspoon ginger 2 tablespoons cornstarch 1 18-ounce cake mix, yellow or your choice, unprepared 1 cup butter, melted Preheat oven to 350 degrees F. Lightly grease 9 x 13 pan. In a medium saucepan, combine peaches, sugar, ginger and cornstarch. Bring to a boil and cook for 1 minute. Remove from stove. Pour peach mixture into prepared pan. Sprinkle dry cake mix over top. Drizzle butter over the cake mix. Bake for 1 hour or until top is lightly browned and peaches are bubbling. Serve with whipped or ice cream.
