I bake quite a lot and I have made muffins from the box and scratch they always turn out quite nicely but I really want to be able to recreate the super moist flavorful top layer of all bakery muffins. The sticky to the touch flavorful top does anyone have any idea of how to do this?

My 12 year old daughter has been having so much fun baking cakes and such from scratch lately. What great fun for a bored summer vacation kid! She is having loads of fun, and we are having loads of fun eating her products. She even tried out making carmel from scratch. I thought it was pretty good, but need to watch out because of my diabetes.

Haven’t really identified what is driving her to bake (other than maybe boredom). I accused her of trying emulate the main character in her latest manga interest: Kitchen Princess. In this manga (asian comicbook, basically), the main character attends a cooking school and her special talent is True Taste. She can eat something once and then reproduce it exactly because she can figure out what ingredients and what cooking method are required to duplicate it. Wow! Wouldn’t that be a great ability for creating scratch cakes?

Imagine, go to a fancy bakery and sample your favorite treat, then go home and make as many as you wish! Go ahead and give it a try. Maybe even have a Bake Off with some friends and see who seems to get the closest to the original.

Well, anyhow, if you have a bored youngster at home, try suggesting they give scratch cake a try. Have fun and enjoy your summer!

I used to live near a bakery that made breakfast pockets with a dipping sauce. Inside were eggs, potatoes (sweet ones too), cheddar cheese, and some other veggies I can’t remember.
I want to make a dough instead of using pita bread or packaged dough.
Would I want to make sourdough for this?
In what order would I cook the inside (veggies/cheese/eggs) and outside (bread)?
By the way, I called this bakery and they are closed.

So I’m about 17, and I was wondering whether there were any bakeries or websites that would allow me to intern at a bakery. If anyone has any advice on how to obtain such an internship that would be appreciated as well. I’m pretty experienced in baking, I’ve made pastries like croissants and french macaroons, and cakes, cookies, etc. I do all this by scratch and by hand – i don’t have any kitchen aid to help me. So anyways any advice would be greatly appreciated. Thank you.
