I have not been successful in making a scratch cake that has not fallen. The most recent was a sweet potatoe cake. It was heavy and very moist. I wanted it to be drier and lighter/fluffy in texture. My cakes usually look good (rise) during the baking phase…Look wonderful when removed from the oven…but thereafter, I don’t know what happens. Could it be the oven temp! I have made sure I follow the instructions of the recipe completely /accurately, and I make sure to use the freshest of ingredients, yet I still have this constant problem. HELP!!!!!

I am not daring enought to make the cake from scratch, so I was wondering if I just use regular white cake mixture from a box, add whatever to it and bake it, then just pour make the three milks mixture and pour it on a let it chill, would get the same result?
