Vanilla Buttercake with Chestnut Cream Filling and Dark Chocolate Ganache Frosting

This is my first cake made from scratch. The vanilla buttercake itself is darker than it usually would be because I used organic whole cane sugar instead of processed white sugar. The taste is great, but the color isn’t the dreamy creamy yellow one might expect.

I also couldn’t resist the temptation to futz with the recipe just the tiniest bit (recipe is from the James Peterson "Baking" cookbook), and so added one crushed macadamia nut and a half stick of cinnamon, crushed. The flavor and aroma additions made the risk all worthwhile.

The chocolate utilized for the chocolate ganache is an 85% pure Bolivian kakao chocolate bar.

I found a recipe but i don’t have buttermilk and i was wondering if it was important in the recipe? or is it just for flavor or something? here’s the recipe:

2 cups of flour
2 cups of sugar
3/4 cup of cocoa
2 teaspoons of baking soda
2 eggs
1 teaspoon of salt
—-the 1 cup of buttermilk—-
1 cup of vegetable oil
1 1/2 teaspoons of vanilla
1 cup of boiling water

Can i make it without the buttermilk?

Layer 1: Strawberry Red Velvet

Hi everyone. I’m new to baking cakes from scratch. I’m making cupcakes for my cousins birthday but I want to make an assorted amount of cupcakes like some chocolate, some vanilla and some strawberry. But usually the ones online makes around 24 cupcakes and that’s too many I want to make around 12 of each flavor.

My sister will be helping me we’re 10 and 12 please no mean answers we are new to baking from scratch.

3/4 c. fluid milk
1 tsp. vanilla
i have all these, except for baking powder. i dont have any baking soda or anything like it. are there any alternatives? what would happen if i left out the baking powder?

What is it in them that gives off that Cherry flavored taste? Is that the Vanilla in them? I was eating a coconut cake (plain white cake, almost as fluffy as Angel Food Cake) with white icing/coconut sprinkles… What makes it smell/taste like cherries??? I really should not be eating Vanilla, is why I ask, FYI….
OoooOoOoo, I know what Almond Extract smells like, you are so right! But thanks also for the tip about the Vanilla being in the frosting and in the fluffy cake. I really shouldn’t be eating it!
